Leprechaun’s Love these Pot of Gold Trail Mix Bars

Forget gold coins, real leprechauns want gold bars, like these Pot of Gold Trail Mix Bars. Time to get away from the hearts and flowers from Valentine’s Day, up next is St. Patrick’s Day.  

Annie loves rice crispy treats.  She got ahold of Ned’s one day when he wasn’t looking and it’s been her favorite treat ever since.  So that is the base for this treat.  Plus, throw in some of her other favorites (chocolate, pretzels and raisins) and you get a loaded, adorable, golden bar of deliciousness good enough for all the leprechauns in the land.

Pot of Gold Trail Mix Bars Ingredients

  • ¼ Cup of Butter
  • 4 Cups of Soft Marshmallows (For half, I used the yellow ones from the Lucky Charm Marshmallows to add to the golden color. The other half I used the regular white Jet Puffed Marshmallows).
  • 5 Cups of Rice Cereal (I used One Cereal, Rice Crisp Brown since there’s a national shortage of Rice Cereal).
  • ½ teaspoon vanilla extract
  • 6 Drops of Yellow Food Coloring (could have added more for a more golden color)
  • ⅓ Cup of Gold Sixlets
  • ½ Cup of Limited Edition: Lucky Charm Marshmallows Only (not the same as above – you can buy the marshmallows alone, unless you have tons of time to pick through a box.  Might be a fun task for a kid if you can convince them not to eat every other one…)
  • ⅓ Cup of Mini Pretzels, rough chopped
  • ⅓ Cup of Golden Raisins

Steps

  1. Over low heat, melt butter completely.  
  2. Add marshmallows gradually and stir often. 
  3. Add vanilla extract and yellow food coloring. Mix well. 
  4. Remove from heat.
  5. Stir in Rice cereal. 
  6. Once marshmallow and rice crispy mixture is combined, stir in the Lucky Charm’s marshmallows, sixlets, chopped pretzels, and golden raisins.
  7. Cut into rectangles and enjoy!
  8. Store in an airtight container or a ziplock bag to maintain freshness.
